Vilnius
Vilnius has one of the best-preserved baroque old towns in Europe and it's genuinely beautiful. The city has invested heavily in its creative scene — there's a neighbourhood called Užupis that declared itself an independent republic, which tells you something about the spirit of the place. Good coffee, good food, affordable, and easy to navigate on foot.
